Goji berries are also well known in English as wolfberries, but they have a number of other names used, and is more popularly marketed as the goji berry. They are brightly colored red, elliptical berries that grow on one to three meter high bushes. These bushes grow naturally in China and Mongolia, but most of those seen in the west come out of China.

Historically gogi berries have been cultured and consumed in China since the seventh century or earlier, the goji berry has only been used in the west in recent years but is vastly known and taken as a health food supplement. It holds status as a superfruit because of it’s high mineral, vitamin, antioxidant, and protein content. These berries have many other macro and micronutrients and are very healthy.

The signatures of authentic Italian food, a culinary delight indeed

Here in the United States, Italian food is a beloved favorite of millions. It should be noted that, over the years, many Italian restaurants have adapted many of their recipes to appeal to American tastes. Pizza and spaghetti are but two classic examples. Here, we’re used to massive amounts of meats, veggies, cheese and sauce on the standard pizza. American style spaghetti is also loaded with meat and sauce. While still delicious, this can’t truly be called authentic Italian food. Here we attempt to describe the basic signatures of authentic Italian food.

Simplicity is just one of the hallmarks of authentic Italian food. Contrasting pizza in America with that served in Italy reveals almost two entirely different dishes. In Italy, you won’t find a five-pound pizza such as we love to buy for a Friday night family feast. The American version of pizza is usually offered in thin, thick, deep-dish and double stuffed versions. Even the thin crust pizza cannot compare in delicacy and flavor to the authentic Italian pizza.

Perhaps because there is so much piled on top of the American style pizza, you may not even notice the flavor of the crust. The Italian pizza has very little tomato sauce, thick and freshly made, spread thinly on the crust and only a few toppings in far more frugal amounts than we are used to seeing on our pizza. This simplicity and apparent sparsity allows the flavors of each ingredient to come out, making for an absolutely heavenly treat for your palate. With fewer and less of the toppings, fresh seasonings are perfectly matched to the other ingredients.

Another key to authentic Italian food is that Italians are fanatical about using only ingredients which are in season, so much so that Italian cook books are generally organized by season, rather than by categories such as salads, entrees and desserts. Italian cooks tend to shop daily for the produce and meats that will be served that day. Most people have herb gardens, no matter how small, to supply all of the seasonings. Seasonal and as fresh as possible is essential in the making of authentic Italian food.

Another characteristic of authentic Italian food is that the presentation must be artistic. You’ll never see a plate loaded up with an entree, pasta and side dish all on the same platter. Food is served in courses, each with its own plate, to be eaten separately. Thus, cold dishes stay cold and hot dishes are properly hot, eaten in sequence instead of languishing on a single plate until you get to each dish in turn.

Wine is usually served with both lunch and dinner. There are dozens of locally produced wines, each with its own special character. Italian cooks are expert in pairing wine and food, thus enhancing the intensity and flavor of both.

The last signature of authentic Italian food is also found in every Italian restaurant, around the world. That would be the hospitality with which it’s served!

Fun With Australian Food

You don’t have to have friends in the country of Australia to be curious about some of the foods that they eat and what these foods taste like. I have friends from that country, and I have learned some very interesting things about Australian food, as well as some things about the foods that we eat here in the United States. Though many foods are the same, they way they taste may be different. If you want to try something new, find some Aussie foods to try out.

There are some types of Australian food that you may never get use to eating, but you can have a fun experience trying them out. Vegemite is probably one of the most commonly known of Australian food items out there, though most people outside of the country have never had it. It looks like a tar, and has a very strong salty taste that is hard to describe otherwise. You may not want to eat this all of the time, but you can not say you have tried everything until you have had Vegemite. Put a very thin layer on your toast and try it out. Who knows? You may even find that you like it.

Another interesting item from Australian food pantries are what are called Musk Sticks. They have other candy made with musk as well. These were pretty, pink sticks that came to my mailbox from my friend. I tried one and regretted it, but I had a lot of fun explaining what it tastes like to my friends. I had even more fun getting them to try it before I gave them that explanation. To me, it tasted like perfume, even though it is a candy in Australia. If you are looking for the perfect gag gift, this is one Australian food that will fit the bill.

One of my Australian friends told me that the main difference she has found between American and Australian food is that we have things with a much sweeter taste. She does not understand why we put sugar in our peanut butter, and their chocolate syrups are not as sweet. If you live there, this is what you are use to. If you find that some of the things that you have are too sweet for you, you may want to find the same thing among Australian food. You may have found a perfect and less sweet substitute.

You can not talk about Australian food without talking about Tim-Tams. These are called biscuits in Australia, but here you would know them as cookies. These are not as sweet as some of the cookies that you have in the US, but they are very good. They have a crisp center with chocolate and other ingredients included. They are amazing with coffee if you remember that they soften up quickly. Dunk and eat fast! If you have been throwing around the idea of trying some Australian food, this is one that you should not skip.

Apple Cake

I have always loved apples. I especially like to bake with them. Although they are good fresh, they are even better with some added sugar, a nice crispy crust, and a little bit of vanilla. After awhile, however, even the best apple pie can get a little bit tiring. Apple cobbler, baked apples, and other variations of the same thing don’t really improve the situation.

That is why I love to bake apple cake for special occasions. It keeps things fresh, and fresh is what I’m all about. The great thing about apple cakes is that they are a little bit unexpected. Usually, if you want to surprise people you have to do something pretty exotic. Apples, however, are about as far from exotic as you can get. Yet even putting them in something as simple as a white cake can create a novel effect. They make it moister, richer, and more delicious.

One of my favorite wrinkles is apple coffee cake. Coffee cake by itself is a little bit too heavy in my opinion. The taste is too strong. I like coffee as a flavoring, but I feel like it needs a little something else. With apples, the coffee acts as more of a spice than a dominant flavor. I use only a little bit of coffee and let the apples take over most of the taste. Sometimes I even add a little bit of vanilla, cinnamon, and cardamom if I am feeling adventurous.

Another of my favorites is apple crumble cake. I can not resist anything with sugar crusted on top, and this type of apple cake delivers abundant crusted sugar. The key is to make the crust perfect. You want just enough brown sugar and you need to have it caramelized to just the right degree. If it is too crunchy, it gets a little bit chewy. If it isn’t caramelized enough, it doesn’t have the nice crispy flavor that makes this cake so good. It definitely takes a little bit of trial and error to get it just right, but it is worth the effort. The results are to die for.

Of course, sometimes a fluffier apple cake is good. I sort of like to blur the distinctions between cakes, pies and tarts. Sometimes having a layer of apple slivers whipped into cream on top of the cake is absolutely delicious. You can even make apple meringue if you’re feeling adventurous.

American Recipes

There is nothing more comforting than authentic American recipes when I am feeling homesick. America is a diverse place and so American food recipes are diverse, but they all have certain things in common.. There is a wholesomeness, a groundedness to American recipes. Many of them are not elaborately spiced or particularly inventive, but they make up for that with wholesome ingredients and familiar combinations of flavors. No matter where you are in the world, you can tell an American recipe by the way it tastes.

One of the most classic American recipes is apple pie. Everyone loves the wholesome taste of apple pie and, although it is eaten in other countries, there still seems to be something quintessentially American about it. One of the great things about cooking with apples is that you can change the flavor of the dish substantially depending on the type of apples that you get. Very sweet apples yield a different sort of pie than tart apples, and red apples and green apples are also much different. You can flavor with cinnamon, nutmeg, sugar, and other ingredients, giving you even more delicious options. Then, you can use a slice of sharp cheddar to get a unique taste sensation that you won’t soon forget.

Many American recipes seem to center around casseroles. The casserole is a convenient, easy way to make a really filling, nourishing meal. By combining a little bit of meat, some noodles, some veggies, a bit of cream, and whatever else you might find around the place, you can make a creamy, filling meal because with almost anything. You can top it with bread crumbs, cheese, or even potato chips if you want to. It is not a particularly healthy or wholesome American recipe, but it sure is a tasty one!

One of my favorite American recipes is meat loaf. I’ve always loved it. Most people don’t fall in the middle on the subject of meatloaf. Either you love it or you hate it. My sister couldn’t stand the growing up, but I could always be counted upon to ask for seconds. It was just so delicious, so rich, and so meaty. I couldn’t get enough of it no matter how hard I tried. I’ve talked to a lot of people, and I’ve reached the conclusion that my mom makes an especially good meatloaf. American recipes are all about innovation, and by adding extra garlic to her dishes, my mom surely has innovated. She also combines starch and oatmeal in her meatloaf in just the right proportion to come up with the perfect texture. Maybe I’m biased, but ultimately that’s what American recipes are all about. You eat what you were raised with, and you enjoy mom’s cooking more than anything else in the world.
